One Pan Mediterranean Salmon
This easy one-pan Mediterranean salmon dinner comes together in just 30 minutes. The recipe features staples of Mediterranean cuisine: orzo, tomatoes, olives, lemon, tomatoes and feta cheese. It's healthy, coms together in one pan. Easy enough to make on a busy weeknight and fancy enough to entertain guests!

Equipment
10 inch oven-safe pan
2-4 6 oz salmon fillets
1 tbsp olive oil
1 c orzo
1/2 c kalamata olives
2 c cherry tomatoes
2 c raw baby spinach
1/2 red onion, diced
2 garlic cloves, finely minced
1 whole lemon - half sliced, half juiced
2 c vegetable broth, preferably low sodium
1/2 tsp salt
1/2 tsp black pepper
1/4 c crumbed feta and 1/4 c chopped parsley, optional for garnish
Intstructions
Preheat oven to 350 degrees. In an oven safe 10 inch skillet. Coat pan with olive oil and add remaining ingredients, besides the salmon. Stir to combine and top with salmon.
Cover pan with a lid or foil and bake for 30-35 minutes, until salmon is cooked through and orzo has absorned cooking liquid. Top with crumbled feta and parsley before serving if desired.
